1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan cheese, divided
1 teaspoon salt
2 (16-ounce) packages mozzarella cheese sticks
4 large eggs, beaten
1 1/2 cups vegetable oil
INSTRUCTIONS
Prepare the Breadcrumb Mixture:
In a medium bowl, combine the Italian-style breadcrumbs, 1 cup of the grated Parmesan cheese, and the salt.
Prepare the Mozzarella Sticks:
Cut each mozzarella stick in half to create shorter sticks.
Coat the Cheese Sticks:
Beat the eggs in a shallow bowl.
Dip each mozzarella stick into the beaten eggs, allowing the excess egg to drip back into the bowl.
Roll the cheese sticks in the breadcrumb mixture, ensuring they are fully coated. Pat the breadcrumbs onto the cheese to help them adhere.
Repeat the dipping and coating process by dipping the cheese sticks back into the egg and then into the breadcrumb mixture for a second coat.
Freeze the Cheese
Sticks:
Place the coated cheese sticks on a baking sheet. Cover them with plastic wrap or foil and freeze until completely frozen, about 2 hours.
Fry the Mozzarella
Sticks:
Heat the vegetable oil in a large frying pan over medium heat until it reaches 350°F (175°C).
Working in batches, fry the frozen cheese sticks until they are golden brown on all sides, about 1 minute per side. Do not overcrowd the pan.
Using a slotted spoon, transfer the fried mozzarella sticks to a plate lined with paper towels to drain any excess oil.
Serve:
Transfer the fried mozzarella sticks to a serving plate.
Sprinkle with the remaining grated Parmesan cheese.
Serve immediately with marinara sauce or your favorite dipping sauce.
