Creamy Parmesan Italian Sausage Soup

Ingredients:
1 lb Italian sausage
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups chopped kale
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste


Directions:
In a large pot, cook the Italian sausage over medium heat until browned. Remove sausage and set aside, leaving the drippings in the pot.
Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
Pour in the chicken broth and diced tomatoes. Stir in the basil, oregano, salt, and pepper.
Return the sausage to the pot and bring the mixture to a boil. Reduce heat and simmer for 15 minutes.
Stir in the heavy cream and grated Parmesan cheese until well combined.
Add the chopped kale and cook until wilted, about 5 minutes. Adjust seasoning as needed.
Serve hot with extra Parmesan cheese on top, if desired.
