Crockpot Creamy Potato & Hamburger Soup

  • 2 tablespoons butter
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup diced carrot
  • 1 cup diced potatoes
  • 1/2 cup chopped green pepper or celery (optional)
  • 1 cup tomato juice
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon seasoned salt
  • 4 cups milk, divided
  • 1/3 cup flour

INSTRUCTIONS

Prepare the Meat and Veggies:

  1. Melt the Butter:
    • In a large skillet over medium heat, melt the butter.
  2. Cook the Beef:
    • Add the ground beef and cook until browned, breaking it up as it cooks.
  3. Cook the Onion:
    • Add the chopped onion to the beef and cook until the onion is transparent, about 3-4 minutes.

Transfer to Crockpot:

  1. Transfer Mixture:
    • Transfer the meat and onion mixture to the crockpot.
  2. Add Veggies and Seasoning:
    • Stir in the diced carrot, diced potatoes, chopped green pepper or celery (if using), tomato juice, salt, black pepper, and seasoned salt.
