- 2 tablespoons butter
- 1 pound ground beef
- 1 cup chopped onion
- 1 cup diced carrot
- 1 cup diced potatoes
- 1/2 cup chopped green pepper or celery (optional)
- 1 cup tomato juice
- 1 1/2 teaspoons salt
- 1/8 teaspoon black pepper
- 1 teaspoon seasoned salt
- 4 cups milk, divided
- 1/3 cup flour
INSTRUCTIONS
Prepare the Meat and Veggies:
- Melt the Butter:
- In a large skillet over medium heat, melt the butter.
- Cook the Beef:
- Add the ground beef and cook until browned, breaking it up as it cooks.
- Cook the Onion:
- Add the chopped onion to the beef and cook until the onion is transparent, about 3-4 minutes.
Transfer to Crockpot:
- Transfer Mixture:
- Transfer the meat and onion mixture to the crockpot.
- Add Veggies and Seasoning:
- Stir in the diced carrot, diced potatoes, chopped green pepper or celery (if using), tomato juice, salt, black pepper, and seasoned salt.
Cook the Soup:
- Cover and Cook:
- Cover the crockpot and cook on low heat for about 6-8 hours, or on high for 3-4 hours, until the vegetables are tender.
Thicken the Soup:
- Prepare Thickening Mixture:
- In a separate bowl, combine the flour with 1 cup of milk. Stir until smooth.
- Add Thickening Mixture:
- About 30 minutes before serving, stir the flour-milk mixture into the soup in the crockpot.
- Add Remaining Milk:
- Add the remaining 3 cups of milk, stirring well.
- Cook Further:
- Let the soup cook for an additional 30 minutes on high heat, stirring occasionally. Do not let the soup boil again.

- Once the soup has thickened and is heated through, ladle the soup into bowls.
