Strawberry Cheesecake Chimichangas

Ingredients:

8-inch soft flour tortillas

Cream Cheese Filling:
8 oz cream cheese, room temperature
1/4 cup sour cream
1 tablespoon sugar
1 teaspoon vanilla extract
1 cup strawberries, diced
1/2 cup strawberry jam

For Frying and Coating:
2 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon cinnamon
Vegetable oil (for frying)

Instructions:

Filling Preparation:
1️⃣ In a bowl, mix together cream cheese, sour cream, sugar, and vanilla extract until smooth.
2️⃣ Gently fold in the diced strawberries and strawberry jam.

Assemble Chimichangas:
3️⃣ Lay a tortilla flat and place about 1/4 cup of the cream cheese mixture in the center.
4️⃣ Fold in the sides and roll up the tortilla like a burrito, securing with a toothpick if necessary.

Fry the Chimichangas:
5️⃣ Heat a sufficient amount of vegetable oil in a large pan over medium-high heat.
6️⃣ Fry the chimichangas until golden brown on all sides, then drain on paper towels.

Coating:
7️⃣ Mix sugar and cinnamon in a shallow dish.
8️⃣ Roll the hot chimichangas in the cinnamon-sugar mixture until coated.

Serving:
9️⃣ Serve the chimichangas warm, garnished with additional strawberry jam or fresh strawberries.
