The Best Chicken Fried Steak

Ingredients:

  • 4 cube steaks
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup water
  • Vegetable oil for frying
    For the gravy:
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste

Directions:

  1. In a shallow dish, combine flour, salt, black pepper, paprika, and cayenne pepper.
  2. In another dish, whisk together buttermilk, eggs, and water.
  3. Dredge each cube steak in the flour mixture, then dip in the buttermilk mixture, and finally coat again in the flour mixture.
  4. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  5. Fry the steaks in the hot oil until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
  6. For the gravy, drain all but 1/4 cup of oil from the skillet and whisk in flour. Cook for 2-3 minutes.
  7. Gradually whisk in milk, cooking until the gravy thickens. Season with salt and pepper.
  8. Serve the chicken fried steaks topped with the creamy gravy.
