Tater Tot Breakfast Bowl with Sausage Gravy

Ingredients:
1 lb breakfast sausage
1/4 cup all-purpose flour
3 cups whole milk
Salt and pepper to taste
1 lb frozen tater tots
1 cup shredded cheddar cheese
2 green onions, chopped
1 tablespoon chopped parsley


Directions:
In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it into crumbles.
Sprinkle flour over the sausage and stir until well combined. Cook for 1-2 minutes.
Gradually whisk in the milk, stirring constantly until the mixture thickens and comes to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally. Season with salt and pepper to taste.
While the gravy simmers, bake the tater tots according to package instructions until crispy and golden brown.
To assemble the bowls, divide the tater tots among serving bowls. Ladle the sausage gravy over the tater tots. Sprinkle with shredded cheddar cheese, chopped green onions, and parsley.
