Ingredients:
12 oz (340g) rotini or penne pasta
2 tbsp olive oil
1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
4 cloves garlic, minced
2 cups heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
2 tbsp chopped fresh parsley (optional)
Instructions:
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ Cook the pasta according to package instructions until al dente. Drain and set aside.
3️⃣ In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until they are no longer pink and slightly golden, about 5-7 minutes. Remove the chicken from the skillet and set aside.
4️⃣ In the same skillet, add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
5️⃣ Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth. Add the garlic powder, onion powder, salt, and pepper.
6️⃣ Return the cooked chicken to the skillet and mix well. Add the cooked pasta and stir until everything is evenly coated with the sauce.
7️⃣ Transfer the pasta mixture to a greased 9×13-inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
8️⃣ Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. If desired, broil for the last 2-3 minutes to get a golden crust.
9️⃣ Remove from the oven and let cool slightly before serving. Garnish with chopped fresh parsley, if desired. Enjoy your Garlic Parmesan Chicken Pasta Bake!
